Sweet Plantain & Prosciutto Grilled Cheese

•    2 slices Texas Toast
•    2 T. mayonnaise
•    2 T. basil pesto
•    2 thin slices Proscuitto di Parma
•    4 slices BIG BANANA® Ripe Plantain Slices
•    2 slices havarti cheese


1.    Preheat oven to 425 degrees. 
2.    Heat non-stick pan on medium heat.
3.    Brush 1 T. mayonnaise on each slice of bread. (1 side only).
4.    Spread basil pesto on other side of bread.
5.    Place 1 slice of cheese, 1 slice of Prosciutto di Parma and 2 slices of of fried sweet plantains on each slice of bread.
6.    Place the mayonnaise side down on the non-stick pan.
7.    Immediately place into oven.
8.    Cook until cheese melts.
9.    Remove and sandwich together. 
10.    Cut in half and serve.
11.    Serve with Pickled Vegetables as a side.
