Quinoa, Golden Berry, Tomato Salad with Sliced Plantains

SERVINGS: 4-6

INGREDIENTS
•    2 C. red quinoa, cooked            
•    30 ea. BIG BANANA® sweet plantain slices    
•    9 C. curly kale, torn                
•    1 C. cherry tomato, halved            
•    3 ea. shallot, small dice            
•    1 ½ C.  TIO JORGE® golden berry    
•    1 ¼ C. spicy sambal dressing*            

*SAMBAL DRESSING
•    5 Tbsp sambal sauce                
•    ¾ C. olive oil                
•    2 Tbsp white wine vinegar        
•    1 tsp sugar                    
•    Salt to taste
•    Black pepper to taste

INSTRUCTIONS
1.    For Spicy Sambal dressing, combine all ingredient in a mixing bowl and whisk together. Set aside.
2.    In a large bowl, mix together quinoa, kale, cherry tomatoes, shallot, and golden berries. 
3.    Pour dressing over salad and toss until lightly dressed.
4.    Lay sweet plantain slices around salad bowl and serve cold.
