Ahi Tuna Poke with Mango Ponzu and Tostones

INGREDIENTS:
MANGO PONZU
• 1 T. mango chunks
• 1 T. white vinegar
• 2 T. soy sauce
• 1 tsp. ginger
• 1 tsp. garlic
• 1 T. lime juice
• 1 T. water
AHI TUNA POKE
• 1 lb. medium diced Ahi tuna
• 3 T. small diced cucumber
• 3 T. small diced red onion
• 3 T. small diced mango chunks
• 2 T. chopped cilantro
• 2 T. chopped Italian parsley
• 1 tsp. paprika
• 2 T. vegetable oil
• ¼ c. Mango Ponzu
• 1 tsp. kosher salt
INSTRUCTIONS:
MANGO PONZU
1. Place ingredients into blender and puree.
AHI TUNA POKE
1. Combine all ingredients and mix together.
GARNISH:
• 12 ea. Fried TIO JORGE® Tostones
• Picked cilantro leaves
• 4 ea. lime wedges
